Easy Sweet Potato Side Dish for Thanksgiving

Vanilla scented sweet potatoes

This is a very easy sweet potato dish. It is delicious and vegan. The coconut and vanilla make a very interesting combo.

Lets face it, the sweet potatoes and cranberry sauce are not favorites but are there because of tradition.. Don’t argue!! They are not! Do you make them during the rest of the year?

So why spend hours fretting and preparing a dish most don’t care about. This is an easy sweet potato dish and people actually like it. It is a more sophisticated dish than most.

All You Need

  • sweet potatoes
  • vanilla
  • coconut yogurt substitute
  • salt

Boil the sweet potatoes then peel them under cold water. You can let them cool them and wait a day. If there are any dark areas scrape it off.

Slice the potatoes like the photo above. If your potatoes aren’t super fresh they will have fibers running the length of the potato. FYI cut your ginger this way too.

Put everything in a bowl and whip it together. DONE!

Vanilla Scented Sweet Potatoes

Easy Thanksgiving side that is elegant and sophisticated. It has undertones of vanilla and coconut.
Course: Side Dish
Cuisine: Thanksgiving

Ingredients

  • 2 large sweet potatoes
  • 1/2 cup coconut yogurt can use cream, butter, or milk
  • 1 tsp vanilla
  • salt to taste

Instructions

  • Boil and peel sweet potatoes. Scrape off any dark areas.
  • slice sweet potatoes against the grain
  • add the rest of the ingredients and whip. I used a hand mixer.
