This is the best creamy potato salad with only 5 ingredient and less mayo. Crushing the potatoes makes it creamy plus you will find any hard pieces.

I have been serving this in my catering company for 25 years and mso many of my clients say it is the best potato salad they have had. Potato salad should never be made more than 24 hours before use. The vegetable turn soggy and they leach their flavors so the salad tastes muddled.
Tips For The Best Creamy Potato Salad
- cook potatoes whole that are about the same size
- once the water boils turn it down and let it simmer
- add a little salt to the boiling water, it will add flavor and make the potatoes a little creamier by raising the boiling temperature
- cut cooked potatoes into quarters add dressing and vegetables and crush with hands while mixing. You will need less mayo.
- If you feel a harder piece crush it or remove
- Wait til the potatoes cool!!! I know they say add dressing when hot. NO NEED! crush the dressing into the potatoes
- If the potatoes are room temp over salt a little because when it chills you will need more salt.
- Last! Do not make more than 24 hours in advance-you can have everything ready in the refrigerator and mix together the day of.
- Before serving check your salt. Salt is the most important ingredient in cooking!!!!!
Best Potato Salad
Super easy potato salad with less mayo. Crush the Yukon gold potatoes into the dressing for a fresh creamy salad.
- 10 small Yukon Gold potatoes (little bigger than a golf ball)
- 1/3 cup onion (I like sweet onion but any work)
- 1/3 cup celery
- 1/3 cup mayo (I like Hellmans)
- 1 tbsp fresh dill
- 1 tsp Old Bay (optional)
- salt and pepper (to taste)
Optional
- Hard Boiled Eggs, green onion, bacon
. boil potatoes until a knife or skewer pokes through smoothly
quarter potatoes after they cooled
add the rest of the ingredient and crush with your hands until it is a nice creamy potato salad. Taste for salt. Don't forget when it gets cold it may need more salt.
If you really want to cut down on the mayo then substitute some of the mayo with the starchy water from canned beans or a a little water you boiled the potatoes in. Sometimes I add mustard and hard boiled eggs.
