This modern technique for sodium citrate mac and cheese lets you use any combination of cheeses you love and make a great mac and cheese with out doing the roux step and no chance of the flour burning and ruining you masterpiece.

Easy creamy mac and cheese. This is a modern take on mac and cheese uses sodium citrate. Sodium Citrate is a a natural citrus salt and will make any cheese melt like Velveeta. Use any combination of your favorite cheeses. Great for a nacho sauce, queso, hot dog sauce, and fondue.

Sodium Citrate stops the fats from separating making the cheesiest, creamiest, lush mac and cheese with two less steps. No roux.

Why? Is it Good?

YES! I started serving this mac and cheese for caterings two years ago and it has been a huge hit. You can easily make this in 10 minutes. You can use any liquid, milk, wine, beer, water and any cheese, gruyere, cheddar, blue cheese, brie etc… I like to use heavy cream because it makes luxurious creamy mac and cheese that could be served in any high end restaurant.

Is It Really Good?

YES AGAIN! This creamy mac and cheese will get raves and your neighbors and friends will be begging you for the recipe.

I repeat!

You pick the cheese, the liquid, and the seasoning. Use any combo of cheeses and seasoning. Make it Southwestern! Add roasted green chilies, chili powder and use jack cheese. What ever you want. Use your imagination.

Easy Steps

This is so simple, heat liquid, melt cheese, add seasoning, add boiled pasta. Done! You want a crust? Go ahead and bake it. I like a panko crust with more grated cheese. Easy instructions below.

All You Need

  • Macaroni
  • Cheese
  • liquid (I like heavy cream)
  • sodium citrate
  • seasoning

I also use sodium citrate for queso and fondue. It is very inexpensive on Amazon. It ships quick and lasts a long time.

Modern Creamy Mac and Cheese

No Roux! Super easy mac and cheese. No burnt flour. Just melt cheese and add pasta!
Total Time15 minutes mins
Servings: 12 side dish
Cost: cheap

Ingredients

  • 1 pound box elbow pasta
  • 2 cup heavy cream use any liquid you want but the cream makes it creamy! lol
  • 24 ounces cheese, grated, chopped sliced I used what I had. Cheddar, manchego,jack. Use what you want.
  • 4 tsp sodium citrate
  • seasoning. I used Old Bay just be careful with salt the sodium citrate is a salt. Add mustard, hot sauce, what ever you want.

Topping

  • 1 cup panko
  • 1/4 cup parmesan
  • 1/4 cup melted butter, or margarine, or oil

Instructions

Mac and Cheese

  • Cook pasta in slightly salted water until done
  • combine the cream, cheese, soduim citrate in a pot over low heat. Stir until the cheese melts and you have a smooth sauce
  • Add your seasoning to taste
  • fold in pasta and transfer to a 9 by 13 inch pan
  • when ready to serve bake at 350 until browned
