Easy Italian Salad Dressing, You’ll Love This

This easy Italian salad dressing takes only 5 minutes to make and it stays emulsified for quite a while thanks to the mustard.

Read below about a secret ingredient that will keep your dressings from separating, keep your herbs suspended, make your dressing stick to the lettuce better, and create a better mouthfeel.

Super Easy

Just add all the ingredient to your food processor or blender and mix. No need drizzle the oil because the mustard will emulsify the dressing. The dressing won’t separate for a long time and when it does just shake it. Read about a special addition that will keep your dressing from ever separating.

The Ingredients for this Easy Italian Salad Dressing

Just add to your blender or processor and mix. Voila! Easy Italian Salad Dressing

  • 1/2 cup red wine vinegar or white wine vinegar
  • 1 tbsp Dijon or whole grain mustard (important for emulsification)
  • 1 tsp oregano
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 black pepper
  • 1.5 tsp sugar
  • 1/2 tsp salt
  • 2/3 cup oil (you can use olive oil or vegetable)
  • 1/3 tsp xanthan gum (optional read below)

Some time I add feta cheese and that make it a great Greek Dressing

Secret Ingredient- Xanthan Gum

Xanthan Gum is a very popular commercial food stabilizer and it is now easily available to home cooks. It is easy to buy online but I have recently seen it in major grocery stores

A little xanthan gum will keep your dressing for separating and it will also keep your spices suspended and give your dressing a better mouthfeel.

Xanthan Gum is also a great thickener and it has many uses in gluten free and vegan cooking.
