How To Make No Lump Couscous. Best Recipe!

September 23, 2022 by Mark

Jump to Recipe Print Recipe

Finally I found the right way to make no lump couscous. So most recipes say pour 1 cup (equal amounts) boiling water over 1 cup couscous, cover and wait five minutes. Then fluff with a fork.

Ok!! I bet you usually end up with a bunch of dough balls that you try to break up with your hands!! If not please tell me your secret!!

Life Changing Discovery! Not Really, But It Was A Couscous Cooking Discovery!!

First, 90% of all couscous in the store is precooked so this works with most.

Second don’t ever buy those little Near East boxes of couscous. Such a rip off for something that sucks!!! Buy something that is bulk packaged and don’t buy flavored stuff!!! Flavor it yourself, it is easy and tastes fresher.

WTF…..

I always buy bulk couscous for my catering company, it is usually in a clear plastic bag but this was all they had (above) and I am glad.

So I get back to my kitchen and I need to make herbed couscous for a catering. I read the instruction and I think WTF, but I think to myself that makes sense. The couscous always come out lumpy and soft.

The Discovery….

One cup water to 1.25 cups couscous and only let it sit covered for 2 minutes. Simple, no more 1 cup to 1 cup and a 5 minute sit!!!

No More Dough Balls!!!

Perfect, al dente, fluffy!

Try this great falafel recipe with the couscous

I am starting a feature called “Restaurant Chronicle” fun stories from the restaurant.
