HOW DO YOU PRONOUNCE PHO? 

Pho is a Vietnamese street food and sometimes considered the national dish of Vietnam so you should probably pronounce it correctly. Pho is pronounce “fuh” not “foe”. If you are still saying “foe” you should probably look up how to pronounce the Greek dish “Gyro”. Now go “make yourself a dang quesadilla”.

THIS QUICK VEGAN PHO IS A HEALTHY, TASTY MEAL. OH! IT’S GLUTEN FREE!

When I feel a little tired or my gut feels off I throw this easy quick vegan pho together. The ginger broth is so good and good for you. Yes it is a ginger broth! Most think the broth is star anise. The noodles are rice noddles and no soy making it gluten free.

Try this easy foolproof recipe. The aroma will have everyone craving a bowl. Good thing it only takes 30 minutes

OH GINGER! THE HEALTHY KEY TO THE BROTH

Ginger is incredible, anti inflammatory, calms the stomach, relaxes, lower cholesterol…. Take a ginger bath before bed and drift off to the best sleep you have had. Read about the benefits of ginger.

The key to the Pho is in the broth.

THE BASE FOR QUICK VEGAN PHO

Grill or broil your ginger and onion until some blackening. Smash the ginger with a mallet, rolling pin, bottle… to release the flavors. Put the onion, ginger and carrot in the water and bring it to a boil.

THE REST

Throw it all in and cover the pot so it boils faster. Turn heat down after boiling and simmer. You don’t have to worry about discoloration from simmering to hard as you do with meat and bones.

  • Pho seasoning packet (remove half the cinnamon) available at Asian markets or online.  If you want to make your own spice mix here is a good one
  • the vegetarian seasoning. It is a mushroom base and it also can take the place of MSG in other dishes. It is easy to find at Asian stores or here. This is a pantry must!
  • vegan fish sauce. I made one but you can easily sub coconut aminos or more vegetarian seasoning. Just wait and adjust the salt level at the end
  • sugar
  • adjust salt or vegetarian seasoning which is salty. Make the broth a little salty because you are going to add a bunch of noodles and herbs.

It will be done in less than 30 minutes so start the rest.

THE FINISH

  • blanche noodles separately. Fresh noodles only take 5 seconds
  • get the condiments ready

QUICK VEGAN PHO CONDIMENTS

I like onion, bean sprouts, Thai basil, cilantro, jalapeno (lots), green onion, firm tofu. You can also add culantro (sawtooth cilantro), lime, siracha, and hoisin (the last 2 never enter my broth). I also skip the culantro. It looks nice but it tastes like cilantro and I end up throwing most of it away.

Ingredients

  • 4 inches ginger halved lengthwise
  • 1 onion halved
  • 1 carrot split lengthwise
  • 10 cups water
  • 2 tbsp vegetable seasoning (Asian stores or online) a pantry must!!!!
  • 1 package pho seasoning (minus some cinnamom) packets at Asian stores or online. can make your own seasoning, read above!!
  • 1 tsp sugar
  • salt. make it a little salty cause lots of additions

Additions

  • 1 package fressh rice noodles, blanched b
  • Thai basil, cilantro, bean sprout, thin sliced onion, green onion, cilantro, sliced jalapeno, lime, hoisin, sirracha

Instructions

  • Grill or broil the ginger and onion. I do this over a gas burner. You can also do it under a broiler. Hit the ginger with a mallet to flatten a little. Don’t break it up. Just want it so more flavor escapes into the broth.
  • Put the spices in the packet in the little cheesecloth bag that is included. I usually remove some cinnamon and add a couple star anise but you don’t have to.
  • Add all the ingredient in the pot and gently boil for 20 minutes. Check for salt. Make it alittle salty because it is going to get diluted with the noodles and the liquid left on noodles after cooking.
  • Drop noodles in boiling water for about 5 seconds. That’s it! Assemble your bowls
