This overnight French toast will blow your mind. I am a very savory breakfast eater, eggs, bacon, Pho, Hash, etc.. I never understood people ordering pancakes, waffles, other sweet things. It just wasn’t my things.
I am a bagel vs donut guy but this bananas Foster overnight French toast has changed everything. Well not totally I still want some eggs and bacon with it.
I actually combined some recipes. This one and this one.
Perfect For Any Occasion
Company, Family, Christmas, anytime this will impress. Most of the prep is the night before and there isn’t much.
First The French Toast Then the Topping.
I used a 1 pound loaf of thick sliced chocolate chip brioche from Aldi. You can use any 1 pound loaf but thick sliced like Texas toast is better and preferable brioche.
You can even use a rustic bread or baguette and cube it like bread pudding. This can be served as bread pudding for dessert.
This is how we do it…
Make your custard mix..
- 6 eggs beaten
- 2.5 cups 1/2 and 1/2 (you can use milk or evaporated milk)
- 1/4 cup sugar
- 1 tsp vanila
- 1 tsp cinnamon
Mix them together well.
The Bread!
Cut your bread in half diagonally and layer them in a 9 by 13 pan. I used a half hotel pan. If you cube the bread just throw it in the pan.
Pour the custard mixture over the bread, cover, and refrigerate over night. If you aren’t doing overnight just leave it out and heat the oven to 350.
The Yummy Topping
I could eat this like soup and there is no way you can keep from trying it a dozen times.
- 1/2 cup butter (1 stick)
- 3/4 cup light or dark brown sugar (make your own)
- 1/2 cup heavy cream (I know it is expensive so find a use for the rest, whip cream?)
- 1/4 tsp salt
- 1/4 tsp cinnamon
- 1 cup chopped pecans
- 1 tsp vanilla
- 2 tbsp dark rum (optional, I rarely use it because I don’t have it and it is still great)
- 1 large banana sliced 1/8 inch (best to use a not ripe banana). Don’t slice until you are ready for the oven. They will turn brown.
Make The Topping
Melt the butter with the brown sugar. Let it bubble for about a minute. Add the cream, pecans, cinnamon, and salt. Let it reduce for 3 minutes stirring. Remove from the heat and add the rum (optional) and vanilla.
If you are doing this overnight don’t cut and add the bananas until the morning.
Good Morning! Let’s Bake
Whoever is the early riser tell them to take the bread mixture out of the refrigerator. You can leave the topping mixture out.
Heat the oven to 375. Cut the banana and add it to the topping mixture. I like to warm up the mixture so it is a little softer.
After letting the bread mixture warm up, about an hour, spoon the topping over the top. There should be enough to cover it.
Baking
Bake for around an hour. It will puff up. Sometimes the middle doesn’t puff which is OK. That happens because there was probably more topping in the middle and I think that is good.
Eat!!! So Good!!

- 1 lbs brioche sliced thick. You can use many kinds of bread so read above. It is worth it. (I used a chocolate chip brioche fro Aldi.)
Breads Custard
