My Favorite Quick Vegan Meal

This is my favorite quick vegan meal and I throw it together in minutes.

I always have dough and fresh salsa in my refrigerator so that helps but you can use any flatbread, salsa, chutney, or your favorite condiment. I recommend you keep some dough around because it is easy to do and it is so much better.

Try this easy dough recipe or this vegan naan recipe and keep it in your refrigerator or freeze portioned balls

FIRST…

Cut up your veggies and garlic. I always have mushrooms and greens (spinach is great)around and they make the best base along with the garlic and seasoning. Use whatever veggies you have, mushroom, spinach, kale, carrot, poblano, red bell, onion…..

Roll out your dough or get out your premade flatbread and cook/heat them in a hot pan. You should keep this vegan dough around, it can be used for many things, flatbread, pizza, rolls, bread etc…

VEGGIE TIME

Wipe the pan out with a paper towel add the oil and sautee your veggies starting with the ones that take longer to cook first (carrot, peppers, onion, mushroom). Add the garlic and the greens and cooks until soft and the liquid is gone. Season with your choice of seasoning, salt, pepper, Cajun, taco, curry etc. Add fresh herbs if you want.

LOAD EVERYTHING ON THE PITA

Put the veggies on the warm flatbread, add toppings and condiments. I always add my pickled jalapenos and fresh salsas. Add what you like-tomatoes, lettuce, salsa, pickles, hot sauce, tahini sauce, soy, balsamic, chutney, etc…

Serve with a salad or side dish to make a quick vegan meal

Easy Vegan Pita

Choose whatever you have, sauté it up and wrap in a flatbread and add condiments

Ingredients

  • 1  veggies cut up I recommend mushrooms and some type og greens to be 2 of them2 cloves garlic minced1 tbsp olice oilseasoning salt pepper, taco seasoning, cajun seasoning, fresh herbs, soy sauce whatever you have and feel like
  • 1 flatbread or doughball rolled out I always keep dough in my refrigerator. I always comes in handy I can make a pita, flatbread pizza, dinner roll, stuffed pocket, calzone.misc.
  • veggie cut up. I think spinach and mushrooms are a must then whatever you have. any greens are good
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • seasoning-salt and pepper, cajun, taco…..
  • Fresh herbs (optional)
  • Toppings you want, lettuce, tomato, onion, olives, pickled peppers, nuts, vegan cheese, sprouts, fresh herbs etc…whatever condiments you have and like-salsas, hot sauce, chutneys, , tahini, vegan yogurt sauce, pico de gallo, olive oil, lemon juice, vegan salad dressing …

Instructions

  • Heat up a skillet and heat up your flatbread or cook your dough
  • wipe pan with paper towel, add the oil and sauté the veggies and garlic
  • season veggies with your choice of seasoning above.
  • wrap veggies in warm pita add toppings and condiment
