Love this dish! Possibly in my top five death row meals!
This dish is very versatile! You can substitute the lamb with beef. I served this in my restaurant and used lamb shanks and it was a big hit. I received a review from The Washington Post.

Before we get to the recipe a little background.
I owned a funky little cafe in Virginia. The cafe was very eclectic and well received. We got an awesome review from The Washington Post. I miss that place.
We had a tight small crew and my first cook/ sous chef was Peruvian. He knew I liked Peruvian food so he took us to an underground Peruvian restaurant. So I brought my crew there and it was awesome!
So we show up. My crew is all hispanic so I thought we were cool. I am a typical white American and the lady running the illegal restaurant was weary. My crew assured her I was ok and she let us in. We were led to a screened in porch in the back yard that had 5 tables set up for dining. Cooler of beer, bathroom with dog, no menu just what she had, had a bean bag game.
