Easy Lomo Saltado with Cold Oil Fries. My Favorite!

This easy Lomo Saltado is a great Chifa dish, Peruvian Chinese classic.

Lomo Saltado! Simple Genius

I saw this dish in every El Salvadoran restaurant in Northern Virginia so I thought it was an El Salvadoran dish. I never even considered ordering it. Meat with French fries and rice. Yuck!

Wait! My Peruvian chef in my first restaurant said. Try it! It is a Peruvian Chinese classic. So I tried it. Wow! I couldn’t believe how much I liked it. The vinegar and soy sauce with the beef, peppers, onions, fries, and rice was the perfect food/junk food.

Peruvian Cuisine is one of my favorites, it has very many international influences including Chinese creating Peruvian Chinese food or Chifa which is a trendy great cuisine. Read more.

OK! Let’s make this easy Lomo Saltado!

Season a 1 pound piece of flank steak (you can use many other cuts but with our trick Flank is the best) with salt and pepper.

Big Trick

Grill (grill pan), sauté, broil the flank for a couple minutes per side and let it rest. Slice it against the grain in thin slices. This will make the meat remain tender. You should do this with any stir fry otherwise the raw slices will bind up and become tough.

Do you need a vegan version

Peruvian yellow aji peppers frozen

Get The Veggies Ready

  • 1 small red onion sliced
  • 2 yellow Peruvian Pepper* or Jalapeno slivered lengthwise
  • 1 red bell pepper sliced lengthwise
  • 2 clove garlic
  • 3 plum tomatoes slice into 8 pieces each lengthwise
  • sprinkle with 1/4 tsp cornstarch**
  • on the side for the finish 1/4 cup chopped cilantro, 3 green onions sliced

*the peppers can be found in the freezer section of many Latin grocers **the sprinkle of cornstarch will slightly thicken the sauce

Get The Sauce Ready

  • 2 tbsp soy sauce
  • 3 tbsp red wine vinegar
  • 1/3 cup beef stock or water and beef bouillon
  • 2 tsp cumin
  • 1/2 tsp oregano

Mix everything together

Let’s Do It!!!

Make your rice and fry your fries. Use frozen fries or make these easy cold oil fries. Heat your pan, I used a wok. It goes fast from here.

  • add a little oil to your hot pan and toss in your sliced beef
  • cook beef for a minute until most of the pink is gone
  • toss in the onions, peppers and garlic, stir fry until they just start to soften
  • toss in tomatoes and stir fry for 30 seconds and tomatoes start to soften
  • pour in the sauce and cook for 30 seconds
  • add fries, green onions, and cilantro, then toss.
  • Mound or mold the rice on 3 or 4 plates.
  • plate stir fry on plate around the rice and add yummy additions.

Yummy Additions

I like to add pickled jalapenos, pico de gallo Peru yellow and/or green sauce

Quick sauce

Yellow sauce-blend 1/4 cup yellow aji paste (can sub 2 large aji peppers above or 1 jalapeno but the color will be green), 1 cup evaporated milk, 8 cracker or bread., 4 ounces of queso fresca or feta, salt to taste. Blend and adjust salt and if it is too thin add more bread or cracker if too thick add more liquid

Green Sauce-add cilantro and blend

Here is another sauce with mayo and lettuce.

Easy Lomo Saltado

This dish is a classic. You must try it.
Course: brunch, Dinner, lunch, Main Course
Cuisine: Peruvian

Ingredients

  • 1 lbs flank steak seasoned with salt and pepper then sliced thin against the grain (see trick) Grill or pan fry flank steak for a couple minutes, let it cool for a couple minutes then slice. This will make a tender meat.
  • 1 small red onion sliced
  • 1 yellow Peruvian pepper or jalapeno sliced thin. Peruvian aji can be found in Latin markets (see above)
  • 1 red bell pepper sliced lengthwise
  • 2 clove garlic minced
  • 3 plum tomatoes sliced in 8 lengthwise slices
  • sprinkle of cornstarch

The Sauce

  • 2 tbsp soy sauce
  • 3 tbsp red wine vinegar
  • 1/3 cup beef stock or water and beef bouillon
  • 2 tsp cumin
  • 1/2 tsp oregano

The Finish

  • 1/4 cup chopped cilantro
  • 3 green oinions sliced
  • 2 cups fried French fries cold oil fries or frozen
  • 2 cups cooked rice

Yummy Additions

  • salsa, pico de gallo
  • Peruvian green or yellow sauce or sour cream see above for simple sauces

Instructions

  • Grill or sauté the flank steak until just browned on both sides, let it cool
  • Cook your rice and fries (see above)
  • mix your sauce. chop cilantro and green onions
  • Slice the flank steak thinly against the grain
  • Heat you pan until very hot. Add a little oil then your onion, peppers, and garlic
  • after the onion barely wilts toss in your tomatoes
  • pour in the sauce it will boil quickly, throw in fries then green onions and cilantro
  • serve with rice, add yummy additions (see above)
