Easy Lomo Saltado

This dish is a classic. You must try it.

Ingredients

  • 1 lbs flank steak seasoned with salt and pepper then sliced thin against the grain (see trick) Grill or pan fry flank steak for a couple minutes, let it cool for a couple minutes then slice. This will make a tender meat.
  • 1 small red onion sliced
  • 1 yellow Peruvian pepper or jalapeno sliced thin. Peruvian aji can be found in Latin markets (see above)
  • 1 red bell pepper sliced lengthwise
  • 2 clove garlic minced
  • 3 plum tomatoes sliced in 8 lengthwise slices
  • sprinkle of cornstarch

The Sauce

  • 2 tbsp soy sauce
  • 3 tbsp red wine vinegar
  • 1/3 cup beef stock or water and beef bouillon
  • 2 tsp cumin
  • 1/2 tsp oregano

The Finish

  • 1/4 cup chopped cilantro
  • 3 green oinions sliced
  • 2 cups fried French fries cold oil fries or frozen
  • 2 cups cooked rice

Yummy Additions

  • salsa, pico de gallo
  • Peruvian green or yellow sauce or sour cream see above for simple sauces

Instructions

  • Grill or sauté the flank steak until just browned on both sides, let it cool
  • Cook your rice and fries (see above)
  • mix your sauce. chop cilantro and green onions
  • Slice the flank steak thinly against the grain
  • Heat you pan until very hot. Add a little oil then your onion, peppers, and garlic
  • after the onion barely wilts toss in your tomatoes
  • pour in the sauce it will boil quickly, throw in fries then green onions and cilantro
  • serve with rice, add yummy additions (see above)
