Big Tip and Secret! Gelatin!

The gelatin is extremely important if you are doing all beef. When you do a mix with veal and pork they add softness. The gelatin will make up for this in all beef meatballs, after all gelatin comes from beef bones!

This is also a good tip for all beef meatloaf. I add 1/2 tsp unflavored gelatin per pound of meat.

Gather The Ingredients for These super Easy Tender Beef meatballs

  • 1 lb ground beef 80/20 or 73/27
  • 1 egg beaten
  • 1/4 cup milk (for Kosher use water)
  • 1/2 tsp unflavored gelatin (use Kosher if needed)
  • 1/2 cup panic bread crumbs
  • 1/4 cup parmesan cheese
  • 1 tsp kosher salt (2/3 table salt)
  • 1/2 tsp black pepper
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder

Mix everything together!

Knead it for a minute to make sure it is mixed.

Form

Heat oven to 350 then form your meatballs. Depending on the size you will get 12-16. Roll them to get any air pockets out!

Place on a baking sheet. You can lightly oil or line with foil.

Bake

Bake for 15 to 18 minutes until browned and firm.
