Pickled Jalapenos Taqueria Style

I overlooked these for years, not anymore!

Ingredients

  • 10 jalapeno sliced
  • 1/2 small carrot peeled and sliced
  • 1/2 small onion sliced
  • 6 cloves garlic
  • 1 tbsp vegetable oil
  • 1.5 cups white vinegar
  • 1 cup water
  • 1 tbsp kosher salt
  • 1 tsp dried oregano
  • 1 tsp cumin seeds
  • 10 black peppercorns
  • 1 bayleaf

Instructions

  • heat oil in medium saucepan, add onion, garlic, and carrots. Sauté for a couple minutes
  • add the jalapenos and sauté for a couple minutes. Add cumin and sauté 30 seconds.
  • add the rest of the ingredient and simmer until jalapenos darken to an army green a couple minutes.
  • let them cool. They will last weeks in the fridge.
